Aniket Kamboj and Sahil Nain Both Win Scholarship

Aniket Kamboj and Sahil Nain, both Ph.D. students working in Dr. Ganjyal’s lab, have been awarded the Anne and Russ Fuller Fellowship for Interdisciplinary Research Scholarship for the 2026–27 academic year. The Fellowship, awarded by the Graduate School, recognizes doctoral students who demonstrate excellence in interdisciplinary research.

Sahil Nain has established a new research collaboration with Dr. Brian Collins in the Department of Physics. His interdisciplinary project, titled “Characterizing nanoscale origins of fibrous texture in high moisture extruded texturized pea protein and chicken breast meat using X-ray scattering,” bridges physics and food science to better understand the structural properties of protein-based foods.

Aniket Kamboj has also expanded the scope of food science research through a collaboration with Dr. Jing Zhao at San Diego State University. His research project, “Azodicarbonamide, hydrogen peroxide, and L-ascorbic acid aid in the modification of protein texture during high-moisture meat analog extrusion processing,” explores the role of chemical agents in improving the texture of plant-based meat analogs.
