Research interests 

  • Rheology and tribology of food systems (from liquid to solid states)
  • Finding new sources of food hydrocolloids from food and agricultural wastes and characterizing their structure-function relationships
  • Characterization of biopolymers interaction in aqueous and emulsion systems
  • Texturization of vegetable oils using protein-polysaccharide aqueous mixtures for application in different food formulations
  • Improve textural and sensory features of reduced-fat and low-fat foods using structured emulsions, as novel fat replacers
