Zachary Cartwright had the opportunity to travel to the UK after winning the 2017 IFT Video Thesis Competition sponsored by Campden BRI. Check out his Q&A about food science and his trip below.
Q: Why did you choose to major in Food Science?
A: I worked at a winery as an undergrad and the owner of the winery encouraged me to look at graduate school to study Enology. I was originally pre-med/pre-dental and Food Science wasn’t something I realized was an option to study.
Q: How did your Food Science major help you in your video submission?
A: My research and the three minute thesis submission to CAHNRS (3MT) helped create an outline for the video. I just needed to incorporate the background and give graphics. Adding visuals for the IFT video seemed to be the best way to appeal to a wide audience. In the video I talked about my two major projects, one on oak aging barrels, Brettanomyces bruxellensis (spoilage micro that my lab focuses on), and one on vineyards where I tracked the survival of microorganisms in vineyards for several years.
Q: What food science related events did you go on during the trip?
A: I first went to the head site for Campden BRI and gave a presentation on my research. Then I was able to go to the Food Matter Live event in Excel, London for 3 days. At the event I met an IFT Executive from Britain, watched several product development student competitions, and attended different talks and exhibits at the event. I was also given the opportunity to visit the Campden BRI Nut-field site and met with Geoff Taylor; he took me to a wine festival in Winchester and we tried wines from all over. The following week was spent touring various vineyards and wineries in England.
Q: What was your favorite part about the trip?
A: My favorite part from this trip was being able to see how wine is made in England and comparing that to how wine is made in New Mexico and Washington. England focuses on White Wines and Sparkling, they don’t have many reds because it is too cold and there is not a big enough market for them.
Q: How has this trip helped/prepared you for your career after graduation?
A: This trip has showed me that Food Science jobs and opportunities are everywhere. It has also helped me create and build new connections that will be useful after graduation.
Q: What advice would you give to future Food Science students?
A: The advice I would give to future Food Science students is to look out for all types of opportunities, take advantage of IFT, and go to as many conferences as possible. It is worth investing your time into outside Food Science opportunities.
